The food is the most important expression of our selves. You come to us to eat and we work to feed you. Our food is fresh, unique, our own and unapologetic.
It’s about the food
This is 35 years in the making. I have been a chef for 35 years in and around Missoula. I started out at the bottom and have worked my way to this moment. I have had the support of my family, friends and fellow kitchen dwellers.
I want to make food that is unapologetic for its flavor, freshness and the traditions that go into making the food. The attitude part of us is I am resolute in my convictions that good food takes time, has to be well thought out and is made the way it is for a reason.
I believe the guest is the most important part of our success. Our desire is to educate our guests about the food we make and the techniques we use.
Chef Eric is a native Montanan. He entered the food industry at Don’s Family Restaurant in Missoula, MT at 15 years old. He attended Western Culinary Institute in Portland, Oregon, which further ignited his passion and dedication to good food. His philosophy of food is simple, clean, big flavors and a little bit of System D.
His culinary career has included stints at several local establishments – the Montana Club, the Catalyst Café, and most recently the Ranch Club. He served as the Executive Sous Chef at the University of Montana, as well as two other school systems during his brief time in Minnesota, where he also was a Sous Chef for Chester’s Kitchen and Bar in Rochester. Upon his return to Montana in 2014, he built the menu and kitchen for Lolo Peak Brewery, where he was the Executive Chef for five years. Eric’s dream has always been to own his own kitchen, and wow people with good, clean food.
He can often be found thumbing through cookbooks (Authentic Mexican, by Rick Bayless), watching a food documentary (The Taco Chronicles; Chef’s Table), or in the kitchen cooking for his family, who will try anything he puts on the table. In his spare time, he enjoys traveling, camping, rafting, biking, and watching his family grow.

Food We Make and How to Get It
We are a food truck. We have a kitchen and will travel.
Catering Available
We will work with you to bring our food to you at home, the office, special events and/or deliver. We also do custom menus and one-off food offerings. Please contact to discuss available options.
Remote Cooking
Our food trailer allows us to get to places others can’t. We are willing to travel to a remote place to offer our food to you.
Contact Us
We would love to hear from you with any questions, concerns or kind words. We are a small business and the chef answers emails and the phones himself. He often prioritizes the food over these. It may take him a bit to respond. Good food takes time and effort.
